A Spoonful of Quarantine

by Lucy and Sadie

Our mission is to provide fun, easy, simple, and accessible ingredients for individuals and families during such a chaotic time. We work to search for recipes using minimal ingredients that are common in supermarkets for those who may be in need, or find fun ways to keep a family entertained. We gather all of our recipes from various sources, but unite them in a common goal of helping those around us in such a time of peril and crisis.

  • Easiest Bread Recipe

This no-knead bread requires only three ingredients and is a delicious and easy staple that you can make in your own homes! Although it does take 24 hours, we can assure you that it’s worth the time.

    Ingredients:

    • 3 cups of any flour
    • ¼ teaspoon yeast
    • 1 ¼ teaspoon salt
    • 1 ⅝ cup water

*⅝ cup is equivalent to ½ cup and 2 tablespoons

    Preparation:

    1. Combine all ingredients into a bowl. Mix just until the dough looks shaggy and a little wet. Cover with plastic wrap and then set aside for 12-18 hours.
    2. After 12-18 hours, the dough should be bubbly and you should see that it has risen significantly.
    3. Flour your surface and take the dough out of the bowl. Fold the dough over 2-3 times only. Put back into the bowl and set aside for 15 minutes. It should be loosely covered.
    4. Place more flour on your surface. Make your dough into a ball. Take a kitchen towel and coat it with a little flour, then place the dough ball into it and wrap loosely. Set aside for 2 hours.
    5. Preheat your oven to 450F. While preheating, place the pan (that you will later put the dough into) in the oven.
    6. Once ready, place the dough ball into the pan and cover it. You can use an actual pan cover or make your own using tin foil.
    7. Cook for 30 minutes covered. Then uncover and cook for another 15 minutes.
    8. Take out of the oven and let it cool for a few minutes and then enjoy!
  • Cheese Quesadilla

    • Shredded cheese
    • Optional: beans or any sort of protein
    • Oil or butter for the pan
    • Sour cream or salsa as a side

    Preparation:

    1. Grate your cheese and set aside.
    2. Turn your stove on medium heat and then add your oil or butter to the pan. Wait for it to heat up and then place the tortilla in the pan.
    3. Brown both sides and then sprinkle on your cheese. Add optional protein here.
    4. Wait for the cheese to melt. Once melted, add your second tortilla on top. Let that brown and then remove from heat.
    5. If desired, cut into fourths and then enjoy!
